You're kind of forced to adapt, and quickly. I assume that you are in Victoria and Victoria had next to no notice to start up again - so it's understandable that you feel this way.
Given that your cafe isn't open yet, I think that you don't owe your customers an explanation - one thing that you can do is to provide some notice that you will be opening soon (and even putting a date in place). This gives you time to settle in and readjust, and allows your customers a bit of transparency so they can come back when you're open.
